Description:
The Farnito line represents the summit of wine making for Carpineto. The name “Farnito” comes from a type of oak tree known as “Farna”. Farnito Cabernet Sauvignon comes from grapes grown in vineyards in Carpineto’s Gaville (Florence) and Chianciano/Montepulciano (Siena) estates. These select vineyards are ideally suited for the production of great wines. The 100% Cabernet Sauvignon grapes are scrupulously field selected from the end of September through early October. The grapes from each vineyard are vinified separately. The final blend is assembled and the cuvee is aged in small oak barrels for about 10 months. It is then bottled and held at the winery until it is ready for release. This carefully crafted wine is bottled without final filtration, and therefore may develop a bit of sediment with age. This will not affect the wine, which if stored properly, will develop for a decade or more.
Characteristics:
The Farnito Cabernet is a brilliant, intense, ruby red color with orange reflections. It has a clean bouquet that transmits complex hints of spices, licorice, vanilla and cherries. The taste is full, rich, and persistent with an elegant tannin structure and finish.
Food Match:
Enjoy this wine with all roasts, game and Tuscan cheeses. Steaks, chops, and rack of lamb are also good pairings.

This pure expression of Cabernet Sauvignon from sunny Tuscany has done a good job of holding up to the heat of the vintage. The wine shows ripe aromas of blackberry, chocolate and spice but does not taste jammy or cooked. In fact, it strikes a very good balance between fruit and firmness.
