Harvested by hand in September, the grapes were immediately cold-soaked for 4 days at the low temperature of 14°C. Fermenation and maceration took place over 8 days at 26°C in stainless steel tanks. During this time, pump-overs were conducted periodically. Malolactic fermentation occurred. The wine was aged in a combination of previously-used French and American oak barrels for 6 months. Fined and filtered prior to bottling, the wine settled in bottle for an additional 3 months prior to release.
Abundant aromas of forest fruits are complimented by hints of toffee and vanilla. Despite its depth, it is fresh on the palate with smooth tannins.
An excellent accompaniment to a wide variety of typical Spanish tapas, from cold-cut platters and aged cheeses to lamb meatballs and bacon-wrapped dates.

Corolilla’s 2007 Crianza Vinas Viejas was made from 100% Bobal and aged for 6 months in French and American oak. It offers up a singular perfume of underbrush, brier, plums and compote of other black fruits. Dense but slightly austere on the palate, it is an excellent value for drinking over the next 3-4 years.
