De Martino
Legado Reserva Carmenère 2008
Alcohol:
14.7%The Legado line of wines from De Martino showcase a specific varietal and their cultivation in the best terroirs of Chile resulting in wines that express the true character of each region.
Vineyards:
Produced from 15 hectares of the Santa Inés vineyard located on an arm of the Maipo River that dried up. This particular vineyard is certified organic by the German organization — BCS Öko-Garantie GmbH. The vines benefit from eastern/western exposures, an altitude of 350 meters, and poor, stony soils with excellent drainage qualities. Deep rooting systems developed due to the alluvial and colluvial soil – which is rich in sand, clay, and gravel – and the dry climate. The stress on the vines naturally controls the vigor of this varietal which was planted at a density of 5000 vines/hectare using the trellis training method.
Technical Data:
- pH: 3.49
- Residual Sugar: 3.29 grams/liter
- Acidity: 5.49 grams/liter
- Dry Extract: 35.30 grams/liter
Winemaking:
De Martino was the first winery in Chile to bottle Carmenère as a single varietal. Hand-harvested during the first week of May, the bunches underwent a 4-7-day cold-soak in stainless steel tanks at 8-10°C. Fermentation took place in stainless steel tanks as well over a span of 9 days at 26-28°C, followed by a 28-day maceration with periodic pump-overs and aeration. Full malolactic fermentation occurred. Aged for 12 months in French oak barriques of 1st, 2nd, 3rd, and 4th use. The wine was filtered and refrigerated prior to bottling and finally cellared for a year prior to release.
Tasting Notes:
The nose is fresh and intense with notes of white pepper and plum, which are balanced by sweet aromas of vanilla. A pleasant acidity fills the palate, with well-structured tannins. The finish is long, with red fruit flavors and hints of vanilla.
Food Pairings:
Enjoy with lamb and wild boar. Also excellent with rich pasta dishes prepared with hearty meat-based sauces.

Herb, toasty oak, mineral and berry aromas precede a snappy, crisp sort of palate that’s showing mostly herbal, toasty flavors of red berry and plum. The wine is good but regular in its approach, with a dry, peppery finish. -M. Schachner, June 2011
