14%De Martino’s organic wines are a true reflection of the ability of Chile’s terrior to produce high-quality wines, while maintaining complete respect for the environment. A percentage of the proceeds from every bottle sold goes to CODEFF, a local charity that preserves and conserves Chile’s beautiful countryside .
Vineyards:
Although the De Martino family has been organically farming their 300 hectares of vineyards in the Maipo Valley for well over a decade, this is only one of two certified organic wines. Approximately 8 hectares (4 of Cabernet Sauvignon and 3.7 Malbec) of the Santa Inés vineyard — which is certified organic by Germany’s BCS Öko Garantie GMBH — are dedicated to the production of this wine. At an altitude of 350 meters above sea level, the soil is of alluvial origin. The trellis training method was used with a density of 5000 vines/hectare.

Winemaking:
Hand-harvested at the end of April, the grapes were carefully selected via use of a sorting table upon arriving at the winery. They immediately underwent a cold-soak for 4-7 days in stainless steel tanks at 8-10°C. Fermentation then took place over a 9-day period at 26-28°C. The wine was left in contact with the skins for 28 days with periodic pump-overs and aeration before being transferred to French oak barriques of 1st, 2nd, and 3rd use for 14 months. Full malolactic fermentation occurred. The wine was filtered and refrigerated then bottled and aged for a year before release.
Tasting Notes:
Elegant floral notes lended from the Malbec combine with aromas of tobacco and spice typical of Cabernet. They are framed by vanilla notes contributed by the oak aging. On the palate, the acidity and freshness are prominent but are balanced by soft, round tannins.

Pairs well with roasted and grilled red meats.
