Technical Data:
- pH: 3.49
- Residual Sugar: 3.3 grams/liter

Winemaking:
Hand-harvested in late September, the grapes immediately underwent a 24-hour cold-soak at 6-8°C in stainless steel tanks upon reception at the winery. Alcoholic fermentation then took place in stainless steel tanks over a 15-20-day period at 28°C. The wine was left in contact with the skins for 15 days with periodic pump-overs, punch-downs, aeration and delestages. The resulting wine was aged in fine-grain, medium-toasted French Allier barriques of 1st, 2nd, and 3rd use for 16 months, during which time malolactic fermentation occurred. Prior to bottling, the wine was micro-filtered, then aged an additional 6 months.
Tasting Notes:
Intense, bold aromas of cherry and raspberry abound. Full-bodied and persistent with smoky, spicy, and earthy flavors. Ripe, sweet tannins and ample acidity finish off this wine.
Food Pairings:
Pairs well with steak and game dishes.

This tastes less ripe than it smells, and the moderately long, chewy finish features youthfully aggressive tannins. Much less soft and accessible than [...]
