Vineyards:

Valpolicella is located in northeastern Italy in the province of Veneto. The vineyard covers 3 hectares of rolling hills facing southwest at 300 meters above sea level. Planted in soil of calcareous origin using the traditional pergola training method, the vines achieve a density of 4000 vines/hectare.

  • pH: 3.65
  • Residual Sugar: 7.0 grams/liter
  • Acidity: 5.5 grams/liter
  • Dry Extract: 35.3 grams/liter

Winemaking:

A selective manual harvest was conducted in October. The bunches were placed in crates and transported to the winery where they were left to dry for 3-4 months until the grapes lost 40-45% of their original weight. The raisined fruit was crushed and the juice fermented over 30 days in stainless steel tanks at temperatures ranging from 5-20°C. Maceration followed for 30 days with periodic pump-overs and delestages conducted. Malolactic fermentation occurred. Aging took place in previously used French and Slavonian oak barrels for 3 years. Prior to bottling, the wine was filtered.

Tasting Notes:

By drying the grapes before crush, the aromas and flavors are concentrated creating an intense bouquet of ripe cherries and raisined fruit. Bold flavors and a velvety texture lead to a long, persistent finish with lingering hints of licorice.

Food Pairings:

Drink with hearty dishes, including game and red meats. Also good with aged cheeses.
