The traditional practice to produce Chianti, called the Governo, consists of a slow refermentation of the wine. This second fermentation is effected by adding a 5-10% concentration of must in late December. The result of the Governo is increased glycerin, which enhances the fruity roundness and freshness of the wine. Opici Chianti is a vintage-dated D.O.C.G. dry red which can be enjoyed young, even chilled.
Opici Chianti has a bright, light ruby color and a touch of violets in the nose. The taste is fresh, crisp, and dry with a clean finish.
