The soil in the Uco Valley is sandy and sandy loam, rocky with very good drainage and poor in organic matter. The Agrelo Valley has deep silty soil, rocky in depth, with good drainage. Both vineyard locations were planted in 2000 using a vertical trellising system leading to average yields of 11 tons/hectare.
Technical Data:
- pH: 3.64
- Acidity: 5.73 grams/liter
Winemaking:
Grapes are received at the winery in late March immediately following the harvest. After the inoculation of selected yeasts, fermentation lasted 8-10 days at 24-26°C temperatues in stainless steal tanks. Maceration occurred over a 12-day period. Pump-overs were initiated 4 times per day during the first 4 days. Malolactic fermentation took place in stainless steel tanks. About 20% of the wine was transferred into oak barrels for 6 months and then once again blended with the unoaked wine.
Tasting Notes:
Black fruit and spices are prominent in the nose, with emerging notes of red pepper and currant. Fresh, vibrant and packed with sweet tannins which give the wine its structure and body. The finish is long and persistent highlighted by hints of elegant toasted-oak flavors.
Food Pairings:
Yauquén Cabernet Sauvignon is excellent with game dishes topped in spicy sauces and wild mushrooms.
